Ingredients

Adjust Servings:
1 chopped onion
6 chopped bacon slices
1 bunch kale
300mL (1 1/4cups) cream I use double cream (50% milk fat) but regular whipping cream is fine too.
2 handfuls grated cheese Anything that melts is good. I like emmental or gruyere but cheddar, parmesan or mozzarella are also great.

Variations

vegetarian – replace bacon with sliced smoked tofu or skip the bacon and serve gratin sprinkled to smoked or roasted nuts. Pine nuts or almonds are especially good.

dairy-free / vegan – replace cream with unsweetened coconut milk and sprinkle with pine nuts or almonds instead of the cheese and bacon.

different greens – most greens will work here. Cavolo nero is great or curly kale, collard greens, English spinach, silverbeet (chard) or even chinese broccoli or broccoli rabe.

different cheese – I used a combo of emmental, gruyere and parmesan but any melting cheese will work including cheddar.

carb lovers / more substantial – toss in some cooked short pasta before adding the cheese.

short on time – cook the onion, bacon and kale on the stove top and skip melting the cheese in the oven.

This is my idea of a perfect one pot Low Carb meal. There’s plenty of goodness from the greens with enough cheesey, bacony highlights to make it super satisfying. Although if you’re cooking for a particularly hungry carnivore you may need to serve it as a side to a roast chicken or juicy steak.

I used purple kale in the picture but any kale or leafy green will work.

Preheat your oven to 180C (350F).

Heat a little oil in an oven proof pot and add bacon and onion. Cook over a medium heat until the onion is soft, about 10 minutes.

Add kale and cook for a few minutes, stirring so it starts to wilt down. Add cream and stir well.

Cover the pot and transfer to the oven. Cook for 15 minutes with the lid on.

Sprinkle over the cheese and cook for another 10-15 minutes or until the kale is tender and the cheese golden. Serve hot.
